Craving something sweet? Try this simple recipe for an olive oil cake! Made from our very own Amelia's Coratina Extra Virgin Olive Oil, this cake is deliciously moist with fresh zesty flavor.
We saw olive oil cake trending and had to give it a try. Our olive oil can be used for more than just savory dinners, it can also be used for dessert or a wonderful dish to bring for brunch with friends!
What you will need:
- 2 cups of flour
- 1 ½ cups of sugar
- 1 ½ teaspoons of salt
- 3 large eggs
- 1 cup of Amelia's Coratina Extra Virgin Olive Oil
- 1 ¼ cups of milk
- 1 teaspoon of vanilla extract
- 2 lemons
- Blackberries
- Powdered sugar
- Mint for garnish
How to make olive oil cake:
- Preheat your oven to 350°
- In a bowl, pour in your dry ingredients (flour, sugar, and salt) and mix
- Then, begin to add the wet ingredients (eggs, milk, olive oil, and vanilla extract)
- Use one of the lemons to zest. Place the lemon zest in a separate bowl. Then, juice half of the lemon, add the juice to the bowl, and mix until fully incorporated
- In an oiled cake pan, pour the batter in and bake for 1 hour
- Once the cake is fully baked through, let it cool for 30-45 minutes
- After, the decorating can begin! With a sifter filled with powdered sugar, begin to dust the top of the cake to your liking
- Then, slice your other lemon into thin slices to lay on top the cake along with a few blackberries and mint leaves
- Finally, enjoy your beautiful cake!
